The effects of Fatty Acids
I. Liver
a) Over consumption of saturated fat reduces function of liver in secreting bile into bloodstream and interference with liver in regulating function of pancreas in insulin production resulting in symptoms of PMS including food and sugar craving.

II. Prostaglandins hormones
1. Definition
Prostaglandins are found in most tissues and organs. They are produced by all nucleated cells except lymphocytes. Prostaglandins are generated from
a) Gamma linoneic acid ( GLA)
b) Arachidinic acid (AA)
c) Eicosapentaenoic acid (EPA)
2. How prostaglandins effect women with PMS
a. Gamma linoneic acid ( GLA)
GLA is also known as essential Omega 6 fatty acid which has anti-inflammatory properties found primarily in vegetable oils. It may also be converted from linolenic acid before converting to prostaglandins PGE1. If there are blockage caused abnormal function of fat and protein metabolism, imbalance of essential Omega 3 and 6 fatty acids and nutrients deficiency, PGE1 may become bad prostaglandins resulting in symptoms of PMS including menstrual pain and cramps.
b. Arachidinic acid (AA)
Arachidinic acid (AA) is also converted from linoleic acids after converting to dihomogamma-linolenic acid (DGLA). It is produced as resulting of unbalance of Omega 3 and 6 fatty acids. Over production of PGE2 causes symptoms of PMS including menstrual pain and cramps. Since meats contain high levels of AA, reducing intake of such products will help to restore the balance of prostaglandins hormone PG1 and PG2.
c. Eicosapentaenoic acid (EPA)
Omega 3 fatty acid containing eicosapentaenoic acid which is also known as also icosapentaenoic acid which is converted from Alpha-linolenic acid. EPA is vital for the production of good prostaglandins PGE3 resulting in lessening the risk of inflammation and symptoms of PMS.
Unbalance of Omega 3 and 6 fatty acids causes unbalance of hormone of members in the prostaglandins and weakens the liver in fatty acids metabolism resulting in increasing the risk of symptoms of premenstrual syndrome.

III. Saturated fat
Saturated fat is fat which consists of triglycerides and contains only saturated fatty acid radicals and comes mainly from animals. It is defined as faulty function of the ovaries related to the women's menstrual cycle, it effects a women's physical and emotional state, and sometimes interferes with daily activities as a result of hormone fluctuation. The syndrome occurs one to two weeks before menstruation and then declines when the period starts.

1. Saturated fat
Most dairy food contains high amount of saturated fat which is one form of triglycerides which deceases the function of liver in secreting bile and lessens the function of liver in fat and protein metabolism resulting in lessening the oxygen transportation to the nervous system causing nervous including depression and emotional and physical stress.
2. Magnesium
Dairy foods contain substances which block the digestive in magnesium absorption. Since magnesium is vital for women with PMS, because magnesium deficiency causes nervous tension resulting of anxiety, depression and mood swing.
3. Arachidonic acid (AA)
Diary foods also contains high amount of arachidonic acid which is converted to bad prostaglandins hormone resulting in interference with our body in production of good prostaglandins hormone causing hormone imbalance and menstrual pain and cramps.

1. Liver functions
Moderate intake of no more than 2 glasses of wine is helpful in liver fat and protein metabolism by increasing the blood flow and awareness of the nervous system. Excessive drinking damages the liver function
a) Detoxifying
Liver is a first line defence of our body besides in fighting against foreign invasion such as forming of free radical and bacteria and virus, it also helps to detoxify our body toxic caused environment toxins accumulation or any harmful substance coming into our body through diet or the air we breath, etc. Without strong liver , it causes over production of estrogen resulting in premenstrual syndrome.
b) Essential fatty acids metabolism

Make 4 cups
Cashews are a sweet nut by nature, and when I make cashew mylk, I often leave out my sweetener. But if you like you mylk on sweeter side, sweeten with stevia, agave syrup or a whole fruit like dates. Sesame seeds make for a calcium packed mylk but can taste a bit bitter, so you may want to mix in some cashew or almond with it. Have fun exploring different nuts and mixes to make endless varieties of mylk.
1/2 cup of you favorite nuts/or seeds, soaked in filtered water (see soaking table on page 33) and rinsed well before using.
Pinch of stevia or 1/2 cup pitted dates or 3 tsp. agave syrup, brown rice, or maple syrup, optional.
Pinch of sea salt
5 cups of coconuts and/or filtered water.
Place all ingredients in the blender, adding a small amount of water first. Blend smooth. Then add remain water and blend. I love fiber in my mylk, but you can always strain it out using a nut mylk or filtered bag if preferred.
Will keep 4 days or longer.
Variation: Add cacao powder, vanilla bean, or strawberries to make different flavored mylk. The possibilities are truly endless.
 Soaking table
Almond, 1cup 8-10 hours, Pecans, Walnuts, Cashews, flax seeds,  sesame seeds 1 cup  4 -6  hours, Buckwheat, Oat groats, 1 cup, 6 hours, Pumpkin seeds 6 -8 hours, Sun flower seeds 1 cup 8 - 10 hours, Quinoa, 1 cup 2 -3 hours.

Caffeine is a stimulant, it helps to improve the function of nervous system if it taken in a right dose. Fruit and nut oatmeal

In a small saucepan combine 1/2 cup fat free milk and 1/2 cup apple juice, bring to boiling
 Stir in 3 dried apricot, diced; 1/2 cup quick cooking rolled oats (not instant); 1/8 teaspoon pumpkin pie spice. 
Reduce heat/ Simmer 2 minutes or until thickened, stirring constantly. 
Remove from heat. 
Cover and let stand for 2 minutes. 
Sprinkle with 1/2 tablespoon chopped walnuts, toasted.
Per serving, 335 calories, 10 fat (1 g sat. fat) 2mg cholesterol, 54g sodium, 43g carb. 13g sugar, 5g fiber, 12g pro.

1. Is artificial sweetener safe?
We always think that sweetener helps to control weigh and misled in believing that sweetener is better that sugar. In fact, it is not true. Sugar helps to provide energy for our body need, over consumption is the problem while sweetener contains aspartame, the substance causes more harm than good to our body including weigh gain and symptoms of pre menstrual syndrome such as depression and anxiety.
2. Serotonin
Artificial sweetener depresses the nervous system in fighting against stress resulting in less levels of serotonin being produced leading to mood swing anddepression.
3. Amino acids
Amino acids are important for liver in protein metabolism. Artificial sweetener contains high levels of aspartic and phenylalanine and it is over 150 times sweeter than sugar, taking artificial sweetener may cause over dose of such amino acids resulting in increasing the risk of nervous tension leading to memory lose, mood swing, depression and symptoms of PMS.
4. Methanol
Artificial sweetener when digest, methanol in the sweetener converts to formaldehyde which is toxic to our body resulting in unbalancing the protein metabolism of the brain leading to symptoms of PMS such as mood swing,anxiety and depression, if it is over dose.
5. Addictive
The chemical aspartame is so addictive. It is wise to stop taking artificial sweetener slowly or ask your doctor for help. Abruptly stop taking aspartame may cause withdrawal symptoms.

Walnut and garlic sauce

For Magret de Canard, This is based on Jeanne Strang's recipe in Goose Fat and Garlic. It is a traditional sauce for duck breast - a constant favorite in south west France, not a great place to be born a duck! It is very garlicky and quite wonderful. My wife Meredith described it as " mind bogging" on the first tasting it 20 years ago.
75 g/ 3 oz. peeled walnuts- take care that bits of shell don't get included
50g/ 2 oz. garlic cloves - crushed
1 tbsp. chopped parsley
salt and pepper to taste
150 ml/5fl oz./ 1/2 cup walnut oil
Put all the ingredients in a food mixer. Mix to a fairly fine texture. Add a little water if need to.

Depression may be a mental health disorder that can affect the way you eat, sleep, and the way you feel about yourself. The mild case of depression can be defeated by a variety of self-care techniques. Others require the treatment of medication, such as antidepressant medications and psychotherapy that help to reduce and sometimes eliminate the symptoms of depression.

1. Aldosterone
Aldosterone produced by adrenal gland, besides helping the kidney in regulating water retention in the body tissues by releasing potassium in the kidney, it also acts on the nervous system in controlling anxiety, fear and stress. Women with pre menstrual syndrome are found to have high levels of aldsterone resulting in increasing emotional and physical stress.
2. Glucocorticoids
Glucocorticoids is also produced by adrenal gland, besides helping liver in regulating the glucose metabolism and immune system in fighting against foreign invasion such as bacteria and virus, it also have an negative effect on central nervous system. Over production of glucocorticoids cause stress.
3. Cortisol
Women with pre menstrual syndrome are found to have high levels of cortisol, it is either caused by inability to cope with daily stress, hormone imbalance or nutrients deficiency before menstruation.
4. Serotonin
Serotonin is a monoamine neurotransmitter synthesized in serotonergic neurons in the central nervous system. Unbalancing of levels of serotonin before menstruation causes nervous tension, water retention, anger, aggression and lost of concentration and stress.
5. Androgen
Androgen is a steroid hormone, it helps to stimulates or controls the development and maintenance of masculine in the body. Unbalancing of androgen can influence our behaviour, such as emotional and physical stress, because our nervous system is sensitive to steroid hormones.
