Isoflavones and cognitive function in older women

In the study to study examines the effects of a dietary supplement of isoflavones on cognitive function in postmenopausal women, posted in PubMed, researchers showed that at baseline, all women were cognitively intact; there were no significant differences by treatment assignment in age, education, depressed mood, or cognitive function (all P values > 0.10). Compliance was 98% and 97%, respectively, in the placebo and treatment groups; all women took at least 85% of their pills. The women in the treatment group did consistently better, both as compared with their own baseline scores and as compared with the placebo group responses at 6 months. Comparisons of percentage change in cognitive function between baseline and follow-up showed greater improvement in category fluency for women on active treatment as compared with the case of those on placebo (P = 0.02) and showed (nonsignificantly) greater improvement on the two other tests of verbal memory and Trails B and concluded that isoflavone supplementation has a favorable effect on cognitive function, particularly verbal memory, in postmenopausal women.

Epidemiological studies suggest that consumption of phytoestrogens, in particular isoflavones, correlates with a lower incidence of breast cancer. However, data from human intervention studies have been less clear, but taken together with the heterogeneous outcomes of human interventions, have led to a controversy surrounding the intake of isoflavone to reduce breast cancer risk. Here, we describe the results of recent human and animal intervention studies and discuss factors that might explain the variation in results. We also describe possible molecular mechanisms of action of isoflavones; distinguishing which mechanism(s) are involved is needed if we are to solve the controversy surrounding the actions of these compounds, according to the study by University of Houston, Houston, posted in PubMed.

Soy protein and Metabolic syndrome (MetS)

In the study of the effects of soy, in the forms of textured soy protein (TSP) and soy nuts, on lipid profiles, apolipoproteins, inflammatory and prothrombotic markers, and blood pressure in elderly women diagnosed with metabolic syndrome (MetS), posted in PubMed, indicated that both forms of soy improved lipid profiles. The group that consumed soy nuts had greater improvement than the TSP group. Therefore, moderate daily intake of soy may be a safe, inexpensive, and practical method to improve the risk of cardiovascular disease (CVD) and reduce the need for medical treatment.

What Makes Tofu Shirataki Noodles?

I'm sure you've heard about the rave. Tofu Shiratake Noodles seems the next best thing to miracle food. But you're skeptical. They cannot be all good. They claim to be low in carbohydrates, low in fat, high in fiber and a sure fire way to lose some weight. But are they really that good for you? We took a look at answering the most frequently asked questions about these tofu noodles.
Where do these noodles come from?
These noodles are a stable dietary staple of the Chinese, Japanese and Vietnamese populations. It is produced in countries where the main ingredient the voodoo lily is easily grown.
Asians Eat weird things, what are these noodles made from?

Because the dietary fibre Glucomannan' absorbs water filling the stomach and intestinal tract, it tricks the body into believing the digestive system is full or sated. Thus preventing binging or craving for more food.
You will therefore eat less, whilst feeling full. The fibre will also clear out your digestive tract allowing for you to better absorb nutrients from your food whilst burning stored Carbs (also known as fat).
Can diabetics eat them?
The consumption of Tofu Shirataki noodles is contra indicated for Type 1 diabetics as they can result in hypoglycemia (very low blood sugar levels) in people already taking medication or who have an overactive pancreas.

The dietary fiber Glucomannan has proven useful in the treatment of patients suffering from high cholesterol or constipation, as it has proven to improve these conditions substationally. Therefore the consumption of Tofu Shirataki noodles is encouraged should you suffer from any of these conditions.
Is there any nutritional value in these noodles, especially if they are low carb?
Yes these noodles contain Lipids, Sodium, potassium, magnesium, iron, phosphorus, copper, zinc, vitamin A, vitamin E, vitamin D, vitamin B1, vitamin B2, vitamin B6, vitamin B12, pantothenate, niacin, fatty acids, folic acid. How To Make Inari Sushi at Home

One of the cheaper and more popular types of sushi in the market nowadays is the Inari Sushi. It is made by stuffing sushi rice, and even some vegetables into small pouches of deep fried bean curd or tofu, also more popularly known in its Japanese term as aburage. Instead of the usual Nori seaweed or soybean paper, aburage is used in this sushi. Aburage can either be sold in packets or packaged in cans, and is widely distributed throughout most Japanese specialty stores or supermarkets. This type of sushi is also called by some famous nicknames, like pocket-sushi and brown-bag sushi. But whatever the monikers may be, this type of sushi is easy to make, less expensive, and tastes really good!
Following the simple procedures below can have you making your own Inari sushi in no time.
Inari Sushi Rice Recipe
Ingredients:
4 deep fried tofu pieces, cut into half
2 cups prepared sushi rice
3 tablespoons sugar
4 tablespoons soy sauce
3 tablespoons Mirin or sweet Japanese cooking wine
1 and ¼ cup Dashi or fish stock
Salt
¼ cup shredded carrots (par-boiled)
1 teaspoon sesame seeds (toasted) optional
Pickled ginger (for garnish)
Steps
1. Since the tofu is deep-fried, it is necessary to get rid of the excess oils. Do this by soaking them in boiling water. Cool for a while, and then cut them into half. This makes 8 tofu pouches in all.
2. Combine soy sauce, sugar, dashi and mirin in a small pan. Bring to a boil over slow to medium heat. Add the tofu pockets to the boiling sauce. Let it simmer for about 15-20 minutes, over slow heat, and completely covered. After 20 minutes, turn off heat, and drain the tofu. Squeeze them dry and set aside.
3. Combine sushi rice, carrots, and the toasted sesame seeds.
4. Stuff the rice mixture into the cut tofu, carefully folding over the ends to secure it.
5. Arrange in a plate and garnish with the pickled ginger.
This recipe yields 8 servings of Inari Sushi
Some useful tips:
o Some canned tofu are seasoned and already cut into serving pouches. Therefore, you can do away with the simmering in soy-sauce and mirin mixture. However, boiling the tofu in the sauce is most ideal, as it will ensure more flavor.
o Mirin is a kind of Japanese cooking wine, sort of a sweeter version of the usual sake. The mixture in making this wine usually consists of steamed mochigome rice, shochu (Japanese liquor), and komekoji (rice yeast). These are then fermented to make mirin. There are actually two types of mirin available in the market. Hon mirin contains 14 percent alcohol. Shin mirin has less than 1 percent alcohol, and is therefore more ideal for cooking. Shin Mirin is often bottled and has a yellow gold color. Mirin is also used to prepare seasoning for sushi rice.
o Aburage is often confused with Atsuage. While both are soybean products, and are deep fried, aburage is of the thinner variety. Atsuage is also triangular in shape, thick, and ideal for simmered soups, added in stir fries, or served with soy sauce. Aburage is often shaped into squares and rectangles. This makes the aburage perfect when stuffed with sushi rice and made into Inari Sushi.
o Dashi or fish stock is relatively easy to make. A cup of Katsuobushi or dried fish flakes can be combined with 2-3 cups of water, and then boiled over low heat. Then the fish flakes can be strained to retain the fish stock.

Shirataki noodles are a Japanese invention. They are made from konnyaku plant. The name Shirataki in Japanese describes its slimy appearance. It is mostly made up of water and easily digestible fiber. This item comes in two varieties in the US. The traditional Shirataki noodles have no carbohydrates and they contain zero calories as well. Another much popular variant is the Tofu Shirataki Noodles. This variant requires refrigeration and has an early expiry date. So it has to be used as soon as purchased. This variant gives a little carbohydrate content.

Soy isoflavones improve insulin sensitivity without changing serum leptin

In the study to investigate the effect of a soy isoflavone extract over insulin sensitivity and plasma leptin levels. Methods Eighty postmenopausal women were randomly assigned to participate for 24 months either to a physical exercise and Mediterranean diet program (Control group: CG) or this intervention plus a daily oral intake of a soy isoflavone extract (Soy isoflavone group: SIG) by Llaneza P, González C, Fernández-Iñarrea J, Alonso A, Díaz F, Pérez-López FR.. posted in PubMed, found that At month 24, body mass index (BMI) was lower in the SIG as compared to the CG. Fat mass, glucose, insulin, HOMA-IR, tumor necrosis factor-α (TNF-α), Kupperman Index and Cervantes Scale values significantly decreased in the SIG as compared to baseline and to CG values. Kupperman scores and serum TNF-α levels significantly decreased in both studied groups. No changes in plasma leptin levels were observed after 24 months within and between groups.

In the study of clinical effectiveness of soy isoflavones may be a function of the ability to biotransform soy isoflavones to the more potent estrogenic metabolite, equol, which may enhance the actions of soy isoflavones, owing to its greater affinity for estrogen receptors, unique antiandrogenic properties, and superior antioxidant activity by Yuan JP, Wang JH, Liu X.. posted in PubMed, indicated that not all individuals consuming daidzein produce equol. Only approximately one-third to one-half of the population is able to metabolize daidzein to equol. This high variability in equol production is presumably attributable to interindividual differences in the composition of the intestinal microflora, which may play an important role in the mechanisms of action of isoflavones. But, the specific bacterial species in the colon involved in the production of equol are yet to be discovered.

Gut bacterial metabolism of the soy isoflavone daidzein

In the study of Gut bacterial metabolism of the soy isoflavone daidzein: exploring the relevance to human health. by Atkinson C, Frankenfeld CL, Lampe JW., posted in PubMed, showed that Daidzein, an isoflavone phytoestrogen found in soy, is metabolized to equol and O-desmethylangolensin (O-DMA) by intestinal bacteria. The specific bacterium/bacteria responsible for equol and O-DMA production in humans have yet to be identified definitively, but in vitro and animal studies have suggested that equol and O-DMA are more biologically active than their precursor daidzein. Interestingly, substantial interindividual differences in daidzein metabolism exist; following soy or daidzein consumption, approximately 30%-50% of the human population produce equol, and approximately 80%-90% produce O-DMA. Observational and intervention studies in humans have suggested that the ability to produce equol and O-DMA may be associated with reduced risk of certain diseases including breast and prostate cancers.

Among humans, 30%-55% have the bacteria capable of producing equol. Factors that influence the capacity to produce equol are not clearly established; however, gut physiology, host genetics, and diet factors are probably related to the individual difference of equol producing. Some studies on high soy-consuming populations reported an inverse association between urinary and serum equol concentrations and breast and prostate cancer risk. Furthermore, several studies of soy supplementation and bone density suggest that soy products may be more effective in maintaining bone density in equol-producing individuals.

In the study of a galactose-free diet enriched in soy isoflavones and antioxidants results in delayed onset of symptoms of Krabbe disease in twitcher mice. posted in PubMed,  the result showed a time-dependent and concentration-dependent decrease of OLP-II viability on exposure to psychosine and dose-dependent protection with the antioxidants xanthophylls and glutathione. They also demonstrated that psychosine-induced p53 induction of apoptosis and TNF-related apoptosis-inducing ligand receptors could be decreased by l-glutathione and xanthophylls. A dietary approach may constitute a promising clinical management of the late-infantile and juvenile forms of Krabbe leukodystrophy.

Soy oil and Steady weight Loss

In the study to investigate of fasted 10-week-old rats were fed a slurry composed of AIN93G (fat-free), Cr(2)O(3) (marker), water, and 7 wt% soy oil or fresh oil (control) and sacrificed at 20, 60, 90, 120, 150, 210, 270 or 360 min. The stomach, small intestine, cecum, colon and feces were then collected to determine the distribution of the slurry in the digestive tract, posted in PubMed, showed that soy oil stimulated peristalsis of the gastrointestinal tract and that colon contents are actively excreted, resulting in safe and steady body weight decreases.

Isoflavone-enriched milk and Bone Mass

In the study to examined the effect of isoflavone-enriched milk on bone loss in ovariectomized (OVX) rats. Thirty 6-week-old Sprague-Dawley female rats were divided into two groups: sham-operated and OVX, posted in PubMed, indicated a significant increase was found in bone density of femur and trabecular bone area in the OVX+Iso+Vit+Ca group, which almost reached that of the sham-operated group, whereas no difference was found among the OVX and OVX+Iso groups. The histological areas of the proximal tibia sections showed highly filled trabecular bone in both isoflavone-enriched groups (OVX+Iso and OVX+Iso+Vit+Ca). The present study indicated that isoflavone-enriched milk may have a partial preventive effect on ovariectomy-induced bone loss; however, vitamins D and K and Ca enrichment with isoflavone may enhance effectiveness for increasing bone mass in OVX rats.

In the study to compare the effects of an isoflavone extract + high Ca to isoflavone extract or high Ca alone on preservation of bone mineral density (BMD) and biomechanical strength in ovariectomized (ovx) rats, posted in PubMed, found that  the isoflavones did not have an uterotrophic effect. In conclusion, isoflavones combined with high Ca are more protective against the loss of femur and vertebra BMD than isoflavones or high Ca diet alone.

Soy and high calcium and Bone mineral density

In the study to determine if feeding soy in combination with a high-calcium diet would preserve bone mineral density and biomechanical bone strength to a greater extent than either soy or calcium alone, posted in PubMed, found that the dietary combination of soy and high calcium did not result in higher femur bone mineral density compared with other ovariectomized groups, and there were no differences in femur yield load or peak load among groups. In contrast, soy plus high calcium resulted in a higher (P < 0.05) vertebral bone mineral density compared with all other ovariectomized groups. Vertebral strength was preserved among rats fed either soy plus high calcium, soy, or high calcium whereas the ovariectomized group fed a control diet had lower (P < 0.05) vertebral strength than the sham-operated group. Bone mineral density of the lumbar spine was the only bone outcome that significantly benefited from the combination of soy and high calcium compared with soy or high calcium alone.

Comparison of the effects of cows' milk, fortified soy milk, and calcium supplement on weight and fat loss in premenopausal overweight and obese women.

In the study to determine the effects of cows' milk, calcium fortified soy milk and calcium supplement on weight and body fat reduction in premenopausal overweight and obese women., posted in PubMed, indicated that comparing the mean differences in weight, waist circumference, body mass index (BMI) and waist-to-hip ratio (WHR) using repeated measure of variance analysis showed that changes in waist circumference and WHR were significant among the four groups (p=0.029 and p=0.015, respectively). After adjustment for baseline values, changes in weight and BMI were also significant (p=0.017 and p=0.019, respectively). Weight reductions in high milk, soy milk, calcium supplement and control groups were 4.43±1.93(kg), 3.46±1.28(kg), 3.89±2.40(kg) and 2.87±1.55(kg), respectively. The greatest changes were seen in the high dairy group in all variables.

Life style modification improves insulin resistance and liver histology in patients with non-alcoholic fatty liver disease

In the study of the effect of regular aerobic exercise on insulin resistance, serum aminotransferase and liver histology in nonalcoholic fatty liver disease (NAFLD) (Seventy percent (42/60) patients were overweight or obese; 95% (57/60) had central obesity (WC > 90 cm in men, > 80 cm in women) patients, posted in PubMed, showed that in the 45 exercise compliant patients insulin resistance decreased from 6.4 ± 6.1 to 1.3 ± 1.0, BMI from 26.7 ± 3.3 kg/m(2) to 25.0 ± 3.3 kg/m(2), WC from 95.7 ± 8.9 cm to 90.8 ± 7.3 cm and ALT from 84.8 ± 43.5 U/L to 41.3 ± 18.2 U/L (P < 0.01). In 15 exercise noncompliant patient's insulin resistance, BMI, WC and ALT did not show significant change at 6 mo follow up. Six of 8 patients in compliant group on repeat liver biopsy showed significant change in steatosis and necroinflammation. Nonalcoholic steatohepatitis scores improved form 5.3 ± 1.5 to 3.35 ± 1.5. The decline in insulin resistance correlated with decline in ALT (P = 0.01, r(s) = 0.90) and liver histology (P = 0.03, r(s) = 0.73).

soy isoflavone genistein and tendon collagen

In the study to evaluate the effects of genistein and moderate intensity exercise on Achilles tendon collagen and cross-linking in intact and ovariectomized (OVX) female Sprague-Dawley rats, posted in PubMed, indicated that after 6 weeks, tendons were assayed for the collagen-specific amino acid hydroxyproline and hydroxylyslpyridinoline (HP). Collagen content was not influenced by exercise (P = 0.40) but was lower (P < 0.001) in OVX-vehicle rats compared with intact vehicle rats (OVX: 894 ± 35 μg collagen/mg dry weight; intact: 1185 ± 72 μg collagen/mg dry weight). In contrast, collagen content in OVX rats treated with genistein was greater (P = 0.010, 1198 ± 121 μg collagen/mg dry weight) when compared with untreated rats and was not different from intact rats (P = 0.89). HP content was lower in OVX genistein-treated rats when compared with intact genistein-treated rats, but only within the sedentary animals (P = 0.05, intact-treated: 232 ± 39 mmol/mol collagen; OVX-treated: 144 ± 21 mmol/mol collagen). Our findings suggest that ovariectomy leads to a reduction in tendon collagen, which is prevented by genistein. HP content, however, may not have increased in proportion to the addition of collagen. Genistein may be useful for improving tendon collagen content in conditions of estrogen deficiency.

Soy tripeptide VPY and Intestinal inflammation

In the examination of the transport of soy-derived di- and tripeptides across Caco-2 intestinal epithelial cells, and the anti-inflammatory effects of the transported peptide VPY (present at residues 153 to 155 of the A5A4B3 subunit of 11S globulin in soybean protein.)  in vitro in Caco-2 and THP-1 macrophages, and in vivo in a mouse model of DSS-induced colitis, posted in PubMed,  showed that VPY is a novel PepT1 substrate that can inhibit the production of pro-inflammatory mediators in vitro in intestinal epithelial and immune cells, and reduce the severity of colitis in mice by down-regulating the expression of pro-inflammatory cytokines in the colon, suggesting that VPY may be promising for the treatment of IBD.

Weight loss without losing muscle mass

In the study to determine change of weight, body composition, metabolic and hormonal parameters induced by different intervention protocols, posted in PubMed, researchers at the Department of Rehabilitative and Preventive Sports Medicine, University Hospital, showed that in all, 83 subjects completed the 6-months study. BMI dropped highly significantly in all groups (LE-G: -2.2+/-1.43 kg/m(2); SD-G: -3.1+/-1.29 kg/m(2); SD/PA-G: -3.0+/-1.29 kg/m(2)). Subjects in the SD-G and in the SD/PA-G lost more weight during the 6-months study (-8.9+/-3.9; -8.9+/-3.9 kg) than did those in the LE-G (-6.2+/-4.2 kg), and had a greater decrease in fat mass (-8.8+/-4.27; -9.4+/-4.54 kg) than those in the LE-G (-6.6+/-4.59 kg). In contrast, no significant intraindividual or between-group changes in the fat-free mass were seen. In all groups, metabolic parameters showed an improvement in glycemic control and lipid profile.

Phytoestrogens modulate binding response of estrogen receptors alpha and beta

In the study of the effects of some dietary phytoestrogens such as the isoflavones genistein and daidzein, its metabolite equol, and the coumestane coumestrol on the binding rate of ERalpha and ERbeta to ERE by a nonradioactive real-time method, posted in PubMed, researchers at the Institute of Nutritional Physiology, Federal Research Centre for Nutrition, showed that genistein and daidzein preferentially activate the binding of ERbeta to ERE. The endogenous hormone 17beta-estradiol as well as coumestrol and daidzein metabolite equol activate the binding of ERbeta to ERE only slightly more effectively than the binding of ERalpha to ERE. Thus, the effect of daidzein can be changed from a specific activator of ERbeta to an activator of both ER isotypes alpha and beta in humans who are able to convert daidzein to equol. While the results of the measurements with ERalpha were in line with the binding affinities of compounds tested for ER, there was a distinct difference between our results and the binding affinities of phytoestrogens for the ERbeta. This leads to the conclusion that phytoestrogens differ not only in their binding affinities for the ER, but also in their potential to increase the rate of receptor binding to the ERE.

Delicious Vegan Whole Wheat Lasagna With Mushrooms Recipe

This dish is one of my favorites so far. I didn't think it will be so good but trust me it's even better than the original meat lasagna. It is perfect if you'd like to start a more healthy, vegetarian diet. Meat-free, whole grains, low fat, this recipe is just perfect for you. Its taste and texture are very similar to the original lasagna recipe.
The wonderful thing about using mushrooms for lasagna is that mushrooms provide a richness and meaty texture that makes most people not miss the meat at all.
I substituted the shredded cheese on top that is usually sprinkled over lasagna with a lovely flavorful tomato and basil sauce. The combination is awesome and you won't miss the cheesy texture. Of course, you can add some cheese on top and it will be heavenly! Vegans can use vegan cheese if they want the same texture.
You definitely must try this! You'll love it!
Ingredients for one 8x12 casserole dish:
  • whole wheat lasagna noodles, cooked slightly (I used lasagna noodles that don't need to be boiled first)
  • 500 g portobello mushrooms
  • 1 carrot
  • 2 big onions, cut in quarters
  • 1 red bell pepper, halved
  • 100 g textured soy protein, granulated (you can replace this by doubling the mushrooms quantity; the taste and texture will be the same. I used soy just for economical purposes.)
  • ground black pepper, to taste
  • sea salt, to taste
  • 2 tsp thyme
  • 1 tbsp unrefined oil
  • one 400 g can peeled tomatoes
  • fresh or dry basil, to taste
Directions:
Grind the carrot, mushrooms, quartered onions and pepper using your food grinder.
Put the mixture in a large bowl and add soy, thyme, sea salt and pepper.
Heat oil in a large pan. Add mixture and sauté for 5 minutes.
Preheat oven to 375° F.
Put some parchment paper on the bottom of the tray to avoid sticking and using any extra oil.
Assemble the lasagna.
Lay down one layer of noodles. Use a spatula to spread 1/2 of the mushroom mixture.
Lay down a second layer of noodles. Spread rest of mixture. Lay down last layer of noodles.
Cover casserole with some aluminum foil. It will cook faster.
Bake for about 40 minutes.
Remove from oven and let sit for about 10 minutes.
Add peeled tomatoes and basil in your food processor and blend. Pour sauce on top of lasagna.
Serve warm.
